Ken and Ching cook their way across China to create a definitive, modern classic of a cookbook on the world's most popular cuisine.Ken and Ching have transformed the way we cook and eat Chinese food. In this exciting new book and TV series, they journey through China on a culinary and cultural odyssey to find the old, the new and the unexpected.
They begin in Beijing, the imperial capital for 800 years. It is a city where tradition and innovation sit side by side, and where quintessential Chinese dishes - noodles, dumplings and Peking duck - are being showcased with a new culinary confidence. As well as cooking for world-class chefs in the fiery kitchens of the city's most celebrated restaurants, Ken and Ching visit the homes of ordinary Beijingers to learn traditional cooking methods. And in a break-away from the city, they travel to the forgotten village of Chuandixia, where ancient traditions are being celebrated and preserved.
China's emergence as one of the world's most influential cultures has ignited our interest in this enigmatic country, but Ken and Ching also have their own quests to explore. They arrive in Beijing to explore the influences of the West on traditional Imperial cuisine and talk to cutting-edge chefs about their take on Peking Duck.
They cook with local familes, en route to discover the influence of Buddhism on vegetarian food and whether the Chinese did actually invent tortellini in remote Kashgar before travelling to Sichuan Province, China's gastronomic capital.
But this is more than a culinary journey, this is a homecoming for Ken and Ching, and they make their own pilgrimages to Guangdong and Fujian to discover their personal and culinary roots.
Ching admires Ken's experience and knowledge, while Ken respects Ching's modern influences. Together they bring a unique and authoritative perspective on Chinese food that will surprise and inform.
In his new BBC2 series,CHING HE HUANG will be teaming up with culinary friend and colleague KEN HOM for an epic gastronomic road trip across China. Though neither were born on Chinese soil, their ancestry has always informed their work in the kitchen. The pair will rediscover the cultural roots of their cooking and, through food, open up a new side of this diverse, evolving and greatly important nation for British audiences.
Their 5000 mile journey will take them from the bustling capital Beijing, along the rural outposts of the Great Wall, through China's spicy Sichuan heartland, before exploring the influence and cuisine of minority cultures in Yunnan and finally sampling the dishes of the mystical Northern city of Kashgar, at the end of the ancient Silk Road.
CHING HE HUANG said 'This series has been a voyage of discovery for me. It has deepened my love of Chinese food and it has given me great hope for the future of this ancient cuisine. I want to share my experience with the world! It was a coming home for me and my Chinese heritage.'
The 4x60 minute series was commissioned by BBC2 controller Janice Hadlow and is produced by Paula Trafford's KEO Films. Paula added 'China is set to become the most powerful country on earth so what better way to understand a culture than through its cuisine - especially for a nation where food is absolutely at its heart.'

Ken and Ching explore the effects of sweeping modernisation in China's fastest growing city, Chengdu. It is the capital of Sichuan province, where the locals cling on to their identity through food. Here, in one of the culinary capitals of the country, they explore the complex and almost addictive spices that set Sichuan food apart and make it the most memorable of all Chinese cuisines. And in a desire to get under the skin of the city, they explore the back streets in search of the most authentic dishes and traditional snacks. They also visit homes and restaurants to banish the gloomy Sichuan climate with some hot and fiery cooking.
Writer and photographer on Chinese food culture Jenny Gao / JING THEORY appeared as their on-screen guide,navigated the show through Chengdu's vibrant fly restaurants 苍蝇馆 scene and even invited Ken and Ching into her grandparents' home to cook up a feast.

Ken and Ching leave the heaving megacities far behind to embark on an intrepid journey across China's vast western frontier where few travellers dare to venture. From the tropical jungles of Yunnan to the deeply divided Muslim city of Kashgar in China's wild west, their journey takes them deep into the culture and cuisines of the country's ethnic minority groups who make up almost 10 percent of the population. This is a China known to few, where communites and their traditions are surviving in the grip of a burgeoning superpower.

n the final leg of their culinary adventure across China, Ken and Ching make an emotional return to their ancestral homes, the climax of their entire journey, before reuniting for their final meal in Hong Kong.
They start first in the dim sum capital Guangzhou to explore the birthplace of Cantonese cuisine, the food most familiar to the west, before heading their separate ways. Ching travels across the south China sea to Taiwan where her food journey began at her grandmother's knee, while Ken cooks for relatives he hasn't seen for more than 23 years.
