Resveratrol for breast cancer prevention and treatment

Breast cancer is the most common cause of cancer-related deaths among women. Therefore, it’s incredibly important that we do as much as possible to prevent it.
Fortunately, adding protective dietary compounds to your daily eating routine is one of the best prevention methods there is.

Resveratrol is a phytoestrogen compound that occurs naturally in foods and beverages like red wine, dark chocolate, cocoa, blueberries, cranberries, peanuts and pistachios.
Researchers have established that the hormone estrogen plays a large role in the initiation, growth and spread of breast cancer cells. And its effects on hormones are just one of the prevention mechanisms resveratrol provides…
You see, resveratrol binds to estrogen receptors and provides unique anti-estrogen activity, which inhibits tumor transformation and cell growth.
On top of this, resveratrol has other anti-tumor capabilities, along with potent antioxidant and anti-inflammatory properties that influence several mediators involved in all stages of cancer development — initiation, promotion and progression.
In terms of breast cancer treatment, one of the major challenges is a worrying phenomenon known as multidrug resistance, where a person is resistant to medications and their treatment becomes difficult, or sometimes even impossible.

Resveratrol reduces drug oxidation metabolism to protect cells from being exposed to further carcinogens. And it also helps modulate the expression of estrogen and regulate the cell cycle — all of which appear to reverse multidrug resistance.
It’s been shown that resveratrol’s effects are dose-dependent, which means it’s important to ensure you get enough in your diet to experience the health benefits.
One issue that can limit resveratrol’s effectiveness is its low bioavailability — in other words, your body doesn’t absorb all of the compound when you consume it.
You can increase the bioavailability by combining resveratrol with other compounds such as piperine (found in black pepper), quercetin (found along with resveratrol in red wine and in foods like tomato, apples and kale), tea polyphenols and curcumin (found in turmeric).
Keeping this in mind, great ways to incorporate resveratrol into your daily diet include:
  • Enjoying a glass of red wine (just one)
  • Consuming a quarter to half a cup of blueberries or cranberries with a cup of green tea
  • Adding peanuts or pistachios to a turmeric-rich curry that includes kale, broccoli and tomato (3 quercetin-rich foods)
  • Enjoying a few squares of dark chocolate with an Earl grey tea
If you have a hard time getting enough resveratrol from food, or if your appetite is low as a result of chemotherapy, resveratrol supplements are also available.
Optimal doses have not been established, but common oral dosages are 500 milligrams taken twice daily.

Flaxseed - 12 Centuries of Experience Back This Tiny, Cancer-Beating Seed

Did you know the Emperor Charlemagne, ruler of a large part of Europe in the 8th century, was so keen on flaxseed benefits that he passed laws to promote the food? Every citizen loyal to the king was expected to eat flaxseed for health.

Some of us don’t need more convincing. Flaxseed is already a popular health food. You can find it everywhere and in wide a range of products, from frozen waffles to oatmeal. Flaxseed is used to feed chickens that lay eggs said to have higher levels of omega-3 fatty acids. And well over 300 new flax-based products came out in the market over the past several years.
Here’s why flaxseeds are so astounding, and why they’re worthy of all the fanfare.
A tiny seed with a power-punch of health benefits
You’ll find two types of flax seeds in most health food stores: brown and yellow/golden. When put through an expeller press (also known as oil pressing), they create a vegetable oil. Both can be consumed, though brown flax oil is most commonly used in paints and for cattle feed.
A good nutritionist tells me there’s no nutritional difference between them.
We know flaxseeds (also called linseeds) have high levels of both fiber and lignans, along with various micronutrients and omega-3 fatty acids. They’re also high in manganese and vitamin B1.
Lignans play an important role in flaxseed’s health benefits. They’re a group of highly-concentrated phytochemicals found in plants. They’re also part of a major class of phytoestrogens, which are basically chemicals similar to human estrogen that can act as antioxidants when consumed. Along with that, lignans have beneficial hormone-like effects on the body.
Image result for flax seedFlaxseeds have a higher level of lignans than most other foods, although lignans can also be found in some cereal grains, fruits (especially strawberries and apricots), and vegetables (particularly the cruciferous ones like broccoli and cabbage).
A diet rich in flaxseed appears to lower cholesterol — especially so for women — along with helping to lower high blood pressure. The little seeds also help stabilize blood sugar levels and thereby help prevent or treat diabetes. Thanks to their dietary fiber content, they can be used to help with constipation. Flaxseed appears to be effective in reducing menopausal symptoms as well.
Yes, flaxseed helps with cancer…
Studies suggest that consuming flax seeds may benefit people with certain types of cancer, especially breast and prostate cancers.
A Duke University study suggested eating flaxseed might inhibit the growth of prostate tumors. And the lignans in flaxseed are believed to cause the body to produce less active forms of estrogen, which lowers breast cancer risk.
Evidence also suggests that consuming ground flaxseed on a regular basis decreases cell growth in breast tissue. Plus, animal studies have shown that both flaxseed oil and lignans can reduce breast tumor growth and the spread of cancer cells, including estrogen receptor positive (ER+) cells.
Yet, in total contrast, because flaxseed has been shown to affect intracellular signals in the body, some researchers believe it could help promote breast and prostate cancer growth. For this reason, they urge patients with ER+ breast cancer to use flaxseed with caution. Lignans are at the center of the controversy because of their potential estrogenic effects in the body. It’s the same hormone-related cloud that hangs over soy products.
This controversy over the phytoestrogens in soy and flaxseed is one of the most vexing in alternative health. I wonder if it will ever be resolved. Those who favor the use of phytoestrogens in treating breast and prostate cancer say the phytoestrogens occupy the estrogen receptors on cancer cells without doing any harm. They elbow out human estrogen and prevent it from worsening these types of cancer.
I come down (with some misgivings) on the side of those who say “Eat your flaxseed.” This is partly because of what I know about the Budwig Protocol.
Image result for flax seedThe Budwig Protocol is one of the most acclaimed and popular alternative cancer treatments. It features flaxseed oil mixed with cottage cheese. My friend Bill Henderson, author of How to Cure Almost Any Cancer at Home on $5.15 a Day, swears by the Budwig Protocol. While flaxseed oil lacks the fiber, it enables you to take in a much larger dose of the lignans and omega-3s than you are ever likely to get from consuming the ground seed.
Thousands of people report controlling and even curing their cancer thanks to the Budwig Protocol (usually used along with other measures such as those Bill recommends in his book.)
There may be some controversy where the estrogen-sensitive cancers are concerned, but for other types of cancer — and as a preventive measure — flaxseed seems to be effective. And lignans also have antiangiogenic properties, meaning they can keep tumors from forming new blood vessels.
Also on the cancer-fighting front, the omega-3 fatty acids in flaxseed are believed to keep malignant cells from hanging on to other body cells.
What’s better: Ground or whole flaxseed?
Most nutrition experts recommend ground flaxseed over whole. Ground flaxseed is easier for your body to digest, while whole flaxseeds can pass through your entire system and remain intact — meaning you won’t get the health benefits.
If you’re looking for a fiber boost, always choose ground flaxseed over flaxseed oil. The fiber is found in the seed coat, which is why you’re better off eating the seed itself.
A single tablespoon of ground flaxseed has roughly two grams of dietary fiber and two grams of polyunsaturated fatty acids (that includes omega 3s). A tablespoon of flax registers at only 37 calories.

Best ways to get your daily dose of flaxseed
For the most part, flaxseed is safe to consume. There could be some complications with toxicity if you eat a massive amount, but that’s true for just about any food. As I noted earlier, flaxseed can act as a laxative and give you diarrhea.
You can buy both whole and ground flaxseed in bulk at most grocery stores and health food stores. If you prefer to grind your own flaxseed, a coffee grinder does the trick. Just be sure to store all ground flaxseed in an airtight container and it will last up to several months. I recommend refrigerating the seeds as well.
Some easy ways to add flaxseed to your diet include:
  • A tablespoon of ground flaxseed in your breakfast cereal (hot or cold)
  • A tablespoon mixed into a serving of yogurt
  • A tablespoon mixed into the mayonnaise or mustard on any sandwich
  • Various amounts baked into breads, cookies, and muffins (I would have some concern about heat reducing the nutritional value) 
Don’t eat more than two or three tablespoons of ground flaxseed per day, or you might spend a lot of time in the bathroom.

Can one tiny seed (flaxseed) put the brakes on cancer?

Not just any seed, mind you...

    But scientists believe flaxseed may pack a powerful punch to knock out estrogen-dependent cancers including breast and prostate cancer.

    A literature review by the American Institute for Cancer Research found that just a few tablespoons of ground flaxseeds daily can alter estrogen levels in a way that may protect you from this deadly disease. That modest dose was enough to reduce tumor formation.

    I eat ground flaxseeds myself. Keep reading and you'll see why. . .

Specifically, the compound called lignans—a phytoestrogen found in flax, wheat and vegetables—seems to provide some top-notch cancer protection.

    And according to a 2011 study in the Journal of Clinical Oncology, boosting lignan intake may improve survival rates in postmenopausal women who've had breast cancer.

    A research team from the German Cancer Research Center in Heidelberg said this could be because lignans are about the same shape as those estrogens in the body that are associated with a higher risk of breast cancer.

    Their shape enables lignans to bind up estrogen receptors—which blocks stronger forms of estrogens from doing so. It's as if lignans take up all the available seats in a theater, and there's nowhere for estrogens to sit.

    Some types of cancer cells need estrogen in order to multiply and form tumors. Because lignan prevents these hormones from binding to estrogen receptors, cancer cells can't grow.

    Lead researcher Jenny Chang-Claude said that the study provided "clear evidence showing that lignans lower not only the risk of developing postmenopausal breast cancer, but also the mortality risk."

More of the lowdown on lignan…
    Lignans, isoflavones and coumestans are the three major classes of compounds that are collectively known as phytoestrogens.

    These compounds are known to play a role in everything from keeping your arteries healthy and your brain sharp to sexual maturation and reproduction.

    The two lignans that play the largest role in keeping humans healthy are called enterodiol and enterolactone.

    These "mammalian lignans" form when gut bacteria interact with lignans in the foods you eat.

    But there's another lignan called podophyllotoxin, that is so effective at targeting and destroying cancer cells—the medical establishment has even modified it for use in chemotherapy.

    And that's not all. Podophyllotoxin's semi-synthetic derivatives—etoposide, teniposide, and etoposide phosphate—are used regularly to battle deadly lung cancer.
 
Scores of studies showcase lignans' promising performance!
    Scientists have produced some impressive study results that demonstrate the beneficial health results of a diet rich in flaxseed lignans.

    Consider just a few examples:
  • Flax seed curbs hot flashes!—a pilot study conducted by Sandhya Pruthi, M.D., of the Mayo Clinic in Rochester, Minnesota found that 28 women who consumed four tablespoons of ground flaxseed daily for six weeks experienced a decrease in hot flashes, from 7.3 to 3.6 a day.
  • Diabetes is decimated!—Animal study results published in Molecular and Cellular Biochemistry showed that the SDG component of flaxseed is an antioxidant that was found to help reduce by 75 percent the development of diabetes in rodents.
  • Provides superior prostate protection!—A recent study found that Scottish men with the highest intake of lignans have the lowest incidence of prostate cancer.
  • Colon cancer is crushed!—A Dutch study published in Cancer Epidemiology, Biomarkers and Prevention associated a high intake of lignans with a reduced risk of colorectal adenomas—growths that are precursors to colon cancer.
    These are just a few of the studies that highlight some of the health-restoring benefits of lignans.

    So if you're ready to get your hands on some of this stuff—look no farther than your local grocery store!

    I eat oatmeal four or five mornings a week, and I make a point of adding several tablespoons of fresh, ground flaxseeds. Flax seeds are by far the richest source of healthy lignan nutrients.

    I grind them in a coffee grinder. (You don't want to use the same grinder for actually grinding coffee beans; I don't think you'll care for flaxseed-flavored coffee). And just to be clear — you don't cook the flaxseed in the oatmeal. You add it raw after the oatmeal is cooked.

    Of course you can add ground flaxseed to anything you want — yogurt, for example. I just happen to be a regular oatmeal eater.
 
Grocery shopping just became therapeutic
    Although especially rich in lignans, flaxseeds aren't the only seeds to provide this nutrient. Sesame and sunflower seeds, as well as cashews and peanuts, provide a healthy dose of lignans. You haven't lived if you've never eaten fresh-made cashew butter. It puts peanut butter in the shade as far as I'm concerned.

    You can also buy whole grain flaxseed bread as another tasty spin on boosting your lignan intake. I like Sam's millet-flax bread, if you can get it.

    Not only can you add a crunchy taste to some of your favorite foods—but you'll also find that flaxseeds can help reduce constipation to give you a "smooth move."

    Although foods that are high in lignans have been shown to play a positive role in breast cancer prevention, the truth is that many women do not eat enough of the types of foods that provide a significant amount of this cancer-fighting nutrient.

    Because these nutrients pass through your system within 24 to 48 hours, it's important to eat enough daily to enjoy their protective benefits.

    If you think your diet might not provide enough lignans, don't worry. In the U.S. you can purchase supplements containing lignans from flaxseed without a prescription.

    Considering the anti-cancer benefits that lignans provide, you might think it's well worth the time to add some lignan-rich foods to your next grocery shopping list.

Researchers have discovered that Chinese mung bean benefits are great in preventing sepsis.

Sepsis is a blood infection that affects more than 700,000 people each year in the United States and can result in a 50% mortality rate for those who contract it.

The Feinstein Institute for Medical Research study was published in Evidence-based Complementary and Alternative Medicine and explained how inflammation – a natural immune response to infection – can get out of hand and cause sepsis.

Demonstrating that mung bean extract has a positive effect on septic mice shows promise that this bean can also have a positive effect on septic humans.”

The septic mice used in their study had a 70% survival rate when given the mung bean extract – a huge improvement over control mice with a survival rate lower than 30%.

The Feinstein Institute has led the way in fighting this medical emergency by promoting early detection and immediate treatment. Over the past four years, their initiatives have led to a 35% decline in mortality cases from sepsis – literally saving thousands of lives.

    The first thing schoolchildren are served as they enter the cafeteria is a carton of milk–followed by menu choices of pizza, burgers, grilled cheese, macaroni and cheese, and countless other items high in saturated fat and cholesterol. All of these foods contain milk. According to the National School Lunch Program, which serves 31 million children every day, “milk consumption in school has increased nearly 10-fold over the past 23 years”.

    Despite its reputation as a wholesome and healthy source of nutrients, getting your calcium and protein from cows’ milk comes at a price: milk and milk products are linked with scores of health issues, like diabetes and cancer. In addition, many people are lactose intolerant or allergic to cows’ milk.

    Despite these concerns, cows’ milk is being pushed in school cafeterias, and millions of kids are drinking cows’ milk and eating dairy. The 2010 reauthorization of the Child Nutrition Act will give America a chance to rethink kids’ school lunches–an important part of kids’ overall nutrition and for many, the main source of nutrients for the day. You can take action to make sure that America’s kids are getting the healthiest lunch possible.

    The health risks linked with milk read like a veritable laundry list of today’s top health concerns. Milk products, like the beloved cheese on top of kids’ school lunch pizzas, are ridden with saturated fat, the artery-clogging fat that leads to heart disease, the top cause of death in America. According to Dr. Joel Fuhrman, author of Disease-Proof Your Child, drinking cows’ milk has been linked to allergies, anal fissures, childhood-onset (type 1) diabetes, chronic constipation, Crohn’s disease, ear infections, heart attacks, multiple sclerosis and prostate cancer.
     
    Milk ads often brag about the calcium in milk–that drinking milk is a great way to prevent osteoporosis. But more and more research is surfacing that shows this might not be true. The American Journal of Public Health published a 12-year study of 78,000 people that found women who drank more than a glass of milk a day (the USDA recommends three cups per day) had a 45 percent greater chance of a hip fracture. Women who got the same amount of calcium from non-dairy sources had no increase.
     
    This means that drinking more milk did nothing to strengthen bones–in fact, it actually weakened them. People who eat plant-based proteins can maintain a positive calcium balance at only 450 mg per day, lower than the recommended daily amount. How is this possible? Because eating and drinking too much protein, which is easy to do when ingesting meat and dairy, leaches calcium from bones. Excess protein in your diet causes your blood to be more acidic, meaning you need more calcium in your diet…so you drink milk, which gives you calcium, along with animal protein, which causes your blood to be more acidic…and the calcium-leaching cycle continues.

    Allergies and Intolerance

    Milk is the #1 allergic food in the country, and close to 50 million Americans are lactose intolerant.
     
    Lactose intolerance occurs when the body doesn’t make enough lactase, the protein we need to digest milk. But this is actually normal! Mammals naturally produce lactase when they are infants in order to digest their mother’s milk, but are eventually supposed to stop producing it once they are weaned. Humans who keep producing lactase into adulthood do so because of a genetic mutation. After all, humans are the only species to drink the milk of another species. Imagine if you saw, say, a zebra drinking the milk of a giraffe. Wouldn’t something just be a bit…unnatural?
     
    A milk allergy is different than lactose intolerance because it’s a reaction to the proteins in cows’ milk, casein and whey. People with milk allergies must avoid all milk and milk products, at the risk of immediate wheezing, vomiting, hives, swelling, or worst of all: anaphylaxis, sudden changes to breathing, heart rate, or other functions.

    More Than Just Calcium in Milk

    The milk routinely served in school cafeterias is an average carton of milk–cows’ milk. Not organic. Not grass-fed. And although cows’ milk does have important nutrients (need that calcium!), it also has a lot of…not-so-desirable components.

    Along with the calcium and protein in an average carton of cows’ milk, researchers have found a range of hormones, including pituitary, hypothalamic, and thyroid. There are gastrointestinal peptides and rBGH, recombinant bovine growth hormone, which is linked to breast, colon and prostate cancer but also increases the cows’ milk production.
     
    There might also be pus in milk. Cows on an average dairy farm are repeatedly impregnated and milked several times a day–this over-milking causes mastitis, or infected udders, which secrete pus. When the cows are being milked, pus from their udders inevitably seeps in with the milk, and national averages show around 322 million cell counts of pus in a glass of milk. Blood is another disturbing ingredient in a glass of milk–the USDA allows 1.5 million white blood cells per milliliter of commonly sold milk.
     
    If cows get infections, they need medicine. The antibiotics the cows are treated with also enter into their milk. Although the Midwest Dairy Association has called milk “one of the most tested, wholesome, and nutritious foods available”, only about 4 of the 85 drugs used to treat dairy cows are tested. The FDA also acknowledges that over half of all milk contains traces of pharmaceuticals.

    Estrogen and Phytoestrogens

    If, after reading these concerns, you find yourself looking for an alternative to milk, your first thought might be soymilk. But wait! Doesn’t soymilk have estrogen in it? Too much estrogen can give women breast cancer, and can make men less masculine…

    While it’s true that soy, like all foods, should be eaten in moderation, soy contains phytoestrogen, which is plant estrogen, and which will not have the same effects on your body as animal estrogen.
     
    In fact, phytoestrogens have actually been found to be beneficial to the human body because they keep our estrogen levels under control. They can act like weak estrogen when our body’s levels are low, and can inhibit estrogen effects when levels are too high. The Journal of Clinical Endocrinology and Metabolism says that phytoestrogens can have health benefits related to cancer, osteoporosis, cardiovascular disease, and menopausal symptoms. There is also evidence that eating and drinking soy in childhood can reduce your risk for cancer later.
     
    Excess animal estrogens can be harmful to the body, and the main source of these estrogens in our diet comes from milk; dairy accounts for 60-80 percent of estrogens we take in. Pregnant females, including pregnant cows, have lots of estrogen in their systems, especially in late pregnancy. A cow must be pregnant or nursing to produce milk, and dairy cows are often milked before they give birth, causing a surge of increased estrogen to enter their milk. One study comparing diet and cancer rates in 42 countries found that milk and cheese were strongly linked with testicular cancer in men ages 20-39. Another finding is that, in the past 50 years, rising dairy consumption in Japan is linked with rising death rates of prostate cancer.

    Non-Dairy Calcium Sources

    Non-dairy sources of calcium are plentiful, and these sources can be low-fat and low (or no) cholesterol. These healthy, calcium-rich foods include fortified cereals, fortified soymilk, nutmilk, ricemilk or other non-dairy milks, dark leafy greens like kale, broccoli or collards, blackstrap molasses, fortified oatmeal, almonds or almond butter, peas, onion, pickles, pumpkin…A plate of baked beans has over 100 milligrams of calcium, and fortified juice can have over 300 milligrams per cup. Calcium can be found in just about every fruit and vegetable, even apples, raisin, dates, and strawberries. If you are eating a whole-foods diet rich in fruits, vegetables, nuts, and whole grains, getting enough calcium should not be an issue.

    As the Child Nutrition Act reauthorization approaches, reconsider the best ways for our kids to get their nutrients. Whether for health, religious, or ethical reasons, kids should have an alternative choice to cows’ milk and milk products in their school lunch. Eating habits that people learn in childhood are carried into adulthood, and kids need to be able to make healthy choices about their diets. More schools are offering alternatives to dairy in their school lunch menus–but this needs to be required. Kids need the option of having a lunch low in fat and cholesterol, but high in nutrients.
     Speak up for the health of America’s children, and tell Congress that kids need alternative choices to dairy in their school lunch.

    Now that daylight is waning, cold and flu bugs are ready to jump on any warm body not armed with a strong immune system. With so many novel herbs and supplements on the market, it's easy to lose sight of the basics for robust immune defenses.

    One of those is the trace element zinc. Your body needs zinc every day in just the right amount, because too much can be as harmful as too little. Your body has no way to store zinc, so it depends on a daily supply through diet. Zinc is important for a number of life-sustaining functions, including:
    • Strong immunity
    • Important component of the enzymes involved in tissue remodeling and prevention of cancer
    • Maintenance of your mood, mental clarity and restorative sleep
    • Prostate and intestinal health
    • Senses of taste and smell
    Zinc is a constituent of at least 3,000 different proteins in your body and a component of more than 200 different enzymes. In fact, zinc is involved in more enzymatic reactions in your body than any other mineral. Zinc increases your production of white blood cells and helps them fight infection more effectively. It also increases killer cells that combat cancer, helps your immune system release more antibodies, and supports wound healing.
    Could You Be Deficient in Zinc?

    Mild zinc deficiency is relatively common, especially in infants and children, pregnant or breast-feeding women, elderly, people with poor gastrointestinal absorption or bowel disease like Crohn's disease, and for those eating vegetarian or vegan diets. A number of factors contribute to the overall problem of zinc deficiency:
    1. Years of commercial farming practices, such as monocropping (planting large expanses of land with the same crop year after year), have left our soils deficient in natural minerals, like zinc.
    2. Certain drugs deplete your body of zinc, such as ACE inhibitors, thiazide diuretics, and acid-reducing drugs like Prliosec and Pepcid.
    3. Certain diets, such as vegetarian/vegan diets and high-grain diets, are low in bioavailable zinc and high in phytic acids, which further impair zinc absorption.
    Mild zinc deficiency can lead to frequent colds and flu, chronic fatigue, and poor general health. In your child, when growth and development are vitally dependent on good nutrition, inadequate zinc can result in mood disturbances, poor memory, impaired learning and poor school performance. Zinc deficiency can also contribute to acne and poor eyesight. Chronic zinc deficiency can affect eyesight, taste, smell, and memory. White spots on your fingernails can indicate you're not getting enough zinc.
    Zinc is a Key Mineral for Your Immune Health

    If your body has inadequate zinc stores, you will experience increased susceptibility to a variety of infectious agents. Your white blood cells simply can't function without zinc. Zinc affects multiple aspects of your immune system, including neutrophils, natural killer cells, phagocytosis, cytokine production, antibody production, and even gene regulation within your lymphocytes. Zinc is involved in many basic cellular functions including DNA replication, RNA transcription, cell division and activation, and stabilization of cell membranes.

    The research on zinc's effect on pathogens is a bit inconsistent, but many studies show a strong protective effect. Some studies show that zinc may reduce the duration of your cold by 50 percent.

    The Cochrane Review found that zinc reduced both the duration and severity of symptoms of the common cold. And using zinc preventatively helped prevent colds, leading to fewer school absences and less antibiotic use by children. Zinc is the hallmark molecule for thymic proteins, which are immune substances made by your thymus gland. Without zinc, you lack this immune defense. Zinc salts are deadly to many pathogens.  
    Viral gastroenteritis is slowed down by the ingestion of zinc due to direct antimicrobial action of the zinc ions in your gastrointestinal tract.

    If You're Pregnant, Zinc is Even MORE Important

    There is rarely a more nutritionally demanding time during a woman's life than pregnancy (and later breastfeeding), when the intake of nutrients from foods and supplements are needed not only to keep her body running but also to nourish and support her rapidly growing baby. Because zinc is required for proper cell division, it is vitally important to get adequate zinc during this time. Low zinc levels have been associated with the following:
    • Premature birth
    • Low birth weight babies
    • Growth retardation
    • Preeclampsia
    One study found that zinc supplementation in pregnancy resulted in babies with significantly larger head circumference and higher birth weight. Zinc has many other important functions in your body, summarized in the following table:
    Zinc is required for your body to utilize vitamin B6 Proper Sleep: Zinc, vitamin B6, and tryptophan are all needed to produce melatonin; zinc deficiency leads to insomnia
    Mood: As with sleep, B6 is needed to produce serotonin, which is crucial for your mood Senses of taste and smell: Zinc is required to produce an enzyme called carbonic anhydrase (CA) VI, critical to taste and smell; deficiency can lead to anorexia.

    High Grain Diets Directly Linked to Zinc Deficiency

    High grain diets can lead to a number of health problems, including severe zinc deficiency, which in turn can lead to rickets and dwarfism. According to nutrition expert Dr. Loren Cordain:
    "It is thought that the high levels of phytate in unleavened whole grain breads cause a zinc deficiency, which in turn is responsible for hypogonadal dwarfism, along with other health problems associated with zinc deficiencies. In Europe, where immigrant Pakistanis consume high levels of unleavened whole grain breads, rickets among their children remains a problem."
    Why is this? Grains are high in phytic acids (as are legumes, seeds, and soy) and phytic acids are known to impair your absorption of minerals such as calcium, iron, magnesium and zinc. People in Western populations most at risk are those with diets high in unrefined grains, legumes, soy protein, and calcium, and low in animal protein.

    Protein assists with zinc absorption. Animal proteins increase zinc absorption in general. Vegetarian and vegan diets, often high in grains and legumes, contain more phytic acid and may increase your risk for zinc deficiency. This is just one of many reasons I don't recommend eating a lot of grains.

    How to Optimize Your Zinc Levels

    As always, it's best to optimize your nutrition by implementing a diet rich in whole foods to receive your zinc requirements. Animal products are by far the richest in dietary zinc, as you can see in the table below. Oysters tip the scales at up to 182mg per serving!

    If, for whatever reason, you are not getting enough zinc, or are a vegetarian or have one of the conditions listed in the table above, you may want to add a zinc supplement. But what kind of supplement should you take?
    Chelated Forms of Zinc are Better Absorbed

    There are a number of forms of zinc available on the market, some better than others. Your body does not easily absorb zinc, unless the zinc is first attached to another substance. Chelation is a process sometimes used to attach zinc to other substances to make it more absorbable and bioavailable. In chelation, the organic molecules have been electrically charged, which allows them to attract the zinc. One advantage of chelated forms is you won't get antagonism with calcium, which can be an issue for zinc salts, such as zinc sulfate.

    Zinc sulfate is one of the inorganic forms of zinc, or zinc salts. These are not as biologically effective as chelated forms. Zinc sulfate can cause stomach irritation. Another inorganic variety is zinc oxide, which is the form of zinc used in many sunscreens.

    Other good forms of zinc include zinc gluconate, which is made essentially by fermenting glucose; zinc acetate, made by combining the zinc with acetic acid; and zinc citrate, made by combining the zinc with citric acid. It's advantageous to take a supplement with a variety of forms, if possible. The current RDAs for zinc are listed in the following table:

    These recommended doses are for ELEMENTAL zinc, and each form of zinc (zinc sulfate, zinc citrate, zinc gluconate, etc.) contains a different amount of elemental zinc. The amount of elemental zinc a supplement contains will be listed in the Supplemental Facts panel on the supplement container.

    For example, approximately 23 percent of zinc sulfate consists of elemental zinc. Therefore, 220 mg of zinc sulfate would give you about 50 mg of elemental zinc. You must take this into consideration if you're going to use a supplement, as well as the fact that the average person gets about 10 to 15 mg of zinc per day from the foods you consume. You will have to use your best judgment in determining if you are at the upper or lower end of that range, based on your dietary habits, and supplement accordingly.

    Too Much of a Good Thing…

    Foods and medications can interfere with absorption, so the timing of your supplement is important. For example, caffeine can interfere with zinc absorption of zinc by as much as 50 percent—so you will want to avoid chasing down your supplement with a cup of coffee. By contrast, the amino acids cysteine and methionine improve zinc absorption, which means taking your zinc supplement with a high-quality whey protein would be a dynamite immune-boosting duo.

    Although it is important to get adequate zinc, balance is key. Taking TOO MUCH can also cause problems, although it generally takes fairly high doses over time to reach toxic levels. Chronically excessive zinc intake can suppress copper and iron absorption leading to deficiencies in those minerals.

    In conclusion, zinc is an often forgotten nutritional staple to add to your flu-busting arsenal. It's inexpensive insurance that can stop those viruses dead in their tracks. In addition to making sure you're getting enough zinc, don't forget how important your vitamin D levels are for keeping you healthy this winter.
