#1. Apple and Watercress Bites with a Cashew Spread Recipe
Apple and Watercress Bites with a Cashew Spread
Ingredients
- 1 cup watercress
- 1 cup cashews, raw and unsalted
- 1 ¼ cups water
- 1 tbsp nutritional yeast
- 1 tbsp avocado oil
- 1 tsp salt
- ½ lemon
- 3 apples, sliced ¼ inch thick
Instructions
- Soak cashews in water overnight, or for 5-6 hours.
- Drain off the liquid from the soaked cashews. Add the soaked cashews, nutritional yeast, avocado oil, juice from half a lemon, and salt to a food processor.
- Blend the ingredients on high until smooth. Occasionally scraping down the sides to make sure all ingredients are well incorporated.
- Top all of the apple slices with a thin layer of the cashew spread.
- Add watercress leaves on top and serve slightly chilled.
